Indonesian Spicy Peanut Chicken (Crock Pot) dinner
Peanuty-sweet, just enough spicy, crock-pot simple family dinner!
Hi Friends!! It’s been way too long since I’ve shared a recipe post. I’ve have a bunch of them on my mind to share, and fall inspires me to get back to them! This time of the year I get extra excited about cooking anything that is warm and hearty, but also healthy. I love root veggies, pumpkin-everything, and today– sweet and spicy!
The recipe I am sharing here is a great fall crock-pot meal, but I actually started playing with it during the summer while Luke was…well, in Indonesia. 🇮🇩 We were missing him after he had been away for what seemed like, ever– and I asked him about what he was eating there. He mentioned a lot of fried foods, which are not my forte. But he also said “chickeny-things…with rice.” Haha. I pushed a little more: “So, flavors? What kind of flavors?” He mentioned spicy flavors and peanut sauce.
Ok, that I can do.
So, while this may not be the most authentic Indonesian food you’ll find (maybe I’ll travel with him next summer, then you just wait…) my family loved it and I think yours might too!
Since I always like to keep things simple, I chose just a few ingredients and combined them all in the crock pot. Then I took Levi golfing. Hours later when I returned the house smelled mouth-watering good.
This will definitely be on my new meal rotation!
I imagine you could vary this in a lot of ways. Next time I think I’ll add some coconut milk in place of (or in addition to?) the broth. More veggies couldn’t hurt either. (unless you ask Levi, haha.) Also, if you’re feeding young kids, you might start with less of the chili sauce. It’s yummy but it does have a kick!

Indonesian Spicy Peanut Chicken in the crock pot.
A warm, sweet and spicy dish the whole family will love.
Ingredients
- 1.5 lbs. chicken breast, cut into bite-size pieces
- 1/4 cup chopped onion
- 1/4 cup natural peanut butter
- 3 tbsp sweet chili sauce
- 1/2 cup chicken broth (or water as option)
- 1/2+1/4 cup sweet peppers, cut into bite-size pieces
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/4 cup chopped, salted peanuts
Instructions

Place chicken pieces in a crock pot

In a bowl, combine chopped onion chicken broth, peanut butter, sweet chili sauce, salt and pepper, and 1/2 cup of the sweet peppers. (save the other1/4 cup for garnish) Stir well, then pour over chicken.

Cook on low, 4-5 hours.

Serve the chicken mixture over prepared rice. Sprinkle with peanuts and remaining sweet peppers.
