Pumpkin Smoothie Bowls with granola and bananas
I know some people would say that pumpkin evvverything has gotten a bit out of hand these days, but I’ll just assume that anyone with that kind of negativity did not open this post.
There. So, we’re all good here, right?
Because there are only a couple months each year to really dive into pumpkin goodness, and I happen to love it. 🎃
And I also love smoothies, and smoothie bowls.
And granola.
And almond butter
And bananas.
This is a fun breakfast, post-workout, after-school-snack, or even dessert.
It has lots of nutrition packed in, and can be made into a smoothie or a bowl, your choice!
Pumpkin granola Smoothie Bowls
Ingredients
- 2 bananas frozen - 2 large or 3-4 small
- 1 cup pumpkin puree canned
- 1 cup plain yogurt frozen or not (and vanilla works great)
- 3 dates pitted
- 3 tbsp almond butter
- 1 tsp cinnamon
- 1/2 tsp pumpkin pie spice
- 1 tsp almond extract
toppings
- 1/4 cup granola
- 1 banana
Instructions

combine all ingredients in a Vita-Mix or other good blender, and blend until well-combined, but still thick! Avoid over-blending.

Scoop out into a container and place in freezer for an hour or two before scooping into bowl. (It's ok to serve immediately, but can be thin with a smoothie-like consistency.)

Top with sliced bananas, granola, nuts, chocolate chips, or anything you like! (cool whip or whipped cream is delicious on these!)
Play with this recipe! You might want to add more almond butter (or prefer peanut butter), or sweeten with maple syrup rather than dates. (or both!)
I calculated this recipe for small servings (imagining a dessert) but if you are having this as a meal or have a hungry teenager needing a post-workout snack, this will make 2 larger servings. Also note: A dollop of cool whip or a sprinkle of chocolate chips on top never hurt anyone either! 😉
If you prefer to make this into a smoothie, just add a little extra milk and blend until smooth and creamy.
It is delicious either way!
