Barbecue Chicken Salad

  • 4-5 cups mixed greens of choice
  • 1-2 chopped tomatoes
  • 1 medium ripe avocado
  • 1 cup corn frozen or fresh
  • 2 large chicken breasts cooked and slathered with barbecue sauce
  • 1 cup shredded cheddar cheese
  • 1 can black beans drained and rinsed
  • 1/4 cup extra barbecue sauce
  • 1/4 cup fresh ranch dressing
  • tortilla chips to garnish


  1. Clean and dry salad greens of choice, and place in the bottom of serving bowl
  2. decorate as you like with each of the ingredients.
  3. Optional to use chicken breast hot off the grill, reheated, or cold.
  4. garnish with tortilla chips
  5. Combine barebecue sauce and ranch dressing and serve it on the side, or toss if you prefer.
