Lemon Garlic Pasta with broccoli and pine nuts

  • 8 cups broccoli florets
  • 1/2 lb pasta of choice (gluten free is fine!)
  • 2 tbsp butter
  • 2 tbsp oilive oil
  • 2 tsp minced garlic
  • zest of one lemon
  • 1 tbsp freshly squeeze lemon juice
  • 1/4 cup toasted pine nuts
  • 1 tsp kosher salt - and more to taste.
  • 1/2 tsp black pepper (and more to taste)
  • freshly grated parmesan cheese as desired.


  1. Cook the broccoli for 3-5 minutes in a large pot of boiling, salted water. Remove broccoli from the water and place in a large bowl.

  2. In the same water, cook the pasta according to package directions, about 12 minutes. Drain well and add to the brocolli.

  3. In small saute pan, heat the butter and oil and cook the garlic and lemon zest over medium-low heat for about a minute. Remove from heat and add salt, pepper, and lemon juice. Pour this over the broccoli and pasta and toss well. Season with salt, toasted pine nuts and cheese. Serve warm!! Enjoy. :)
