Ingredients
heaping 1/2 cup of pumpkin puree

rolled oats
1/2
cup
honey
1/2
cup
shredded
unsweetened coconut
1/2
cup
finely chopped dates
may substitute raisins or craisins if you prefer.

Tablespoon
chia seeds
optional
1/3
cup
slivered almonds or other nuts of choice
optional

tsp
vanilla extract
2
tsp
pumpkin pie spice
Optional Add-in: 1/4 cup mini-chocolate chips
Instructions
Combine all ingredients in a bowl, mixing well.
Roll into bite-sized balls and place on a plate or cooking sheet
Refrigerate til firm and cold
ENJOY!
**Keep in refrigerator for up to a week for best flavor.
