Baked Pumpkin Oatmeal. The Perfect Fall Breakfast!

Ingredients

  • 3 cups rolled oats
  • 1/4 cup ground flax seed option to add or use chia seed as well
  • 2 Tablespoons butter melted (optional really.)
  • 1 cup pumpkin puree
  • 2 eggs beaten
  • 1/2 cup maple syrup
  • Optional- add 1/4 cup agave nectar if you want it sweeter.
  • 1 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 2 cups milk I used almond
  • 2 teaspoons vanilla
  • Optional: 1/2 cup chopped walnuts or pecans

Instructions

  1. Preheat oven to 350 degrees
  2. lightly grease a 9X12 inch baking pan
  3. Mix all dry ingredients in one bowl
  4. Mix all wet ingredients in another bowl
  5. Add wet ingredients to dry, and combine well
  6. Pour batter into the baking dish, and bake 30-40 minutes, until lightly browned but still soft in center
  7. Scoop into bowls and top with cold milk, or let cool and cut into squares. (or a little of each!)
