Pumpkin granola Smoothie Bowls

Ingredients

  • 2 bananas frozen - 2 large or 3-4 small
  • 1 cup pumpkin puree canned
  • 1 cup plain yogurt frozen or not (and vanilla works great)
  • 3 dates pitted
  • 3 tbsp almond butter
  • 1 tsp cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1 tsp almond extract

toppings

  • 1/4 cup granola
  • 1 banana

Instructions

  1. combine all ingredients in a Vita-Mix or other good blender, and blend until well-combined, but still thick! Avoid over-blending.

  2. Scoop out into a container and place in freezer for an hour or two before scooping into bowl. (It's ok to serve immediately, but can be thin with a smoothie-like consistency.)

  3. Top with sliced bananas, granola, nuts, chocolate chips, or anything you like! (cool whip or whipped cream is delicious on these!)
