Indonesian Spicy Peanut Chicken in the crock pot.

Ingredients

  • 1.5 lbs. chicken breast, cut into bite-size pieces
  • 1/4 cup chopped onion
  • 1/4 cup natural peanut butter
  • 3 tbsp sweet chili sauce
  • 1/2 cup chicken broth (or water as option)
  • 1/2+1/4 cup sweet peppers, cut into bite-size pieces
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup chopped, salted peanuts

Instructions

  1. Place chicken pieces in a crock pot

  2. In a bowl, combine chopped onion chicken broth, peanut butter, sweet chili sauce, salt and pepper, and 1/2 cup of the sweet peppers. (save the other1/4 cup for garnish) Stir well, then pour over chicken.

  3. Cook on low, 4-5 hours.

  4. Serve the chicken mixture over prepared rice. Sprinkle with peanuts and remaining sweet peppers.
