Tropical Mango Salsa

Ingredients

  • 1 cup chopped mango
  • 1/2-1 cup diced pineapple
  • 1/2-1 cup diced banana
  • 1/4 cup chopped red bell pepper
  • 2-3 green onions finely chopped
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons fresh lime juice
  • 1 1/2 teaspoons minced jalepeno pepper
  • 1-2 teaspoons grated peeled fresh ginger to taste
  • 2 teaspoons honey

Instructions

  1. Combine everything but the banana in a medium bowl and mix well.
  2. Refrigerate for thirty minutes.
  3. Just before serving add the diced bananas.
  4. Use on top of fresh fish, or in heaping spoonfuls on top of tortilla chips
  5. ENJOY! :)
