    Flavor is PHENOMENAL! Super yummy and delicious, I have a lot of papaya to use up because I realized I don’t like it very much but these bars were so yummy. Giving 4 stars because like others said, it didn’t set! The crust took me 45 minutes, the filling took an hour. Im thinking the issue is that I needed to pack the almond flour in more? I’m not too sure. The taste is great and they did set after a long while of baking and some tweaking. (: recipe was confusing for me at the beginning where you said add almond flour, in step 3 you said add almond flour and coconut oil the in step 4 said add almond flour again. Am I supposed to add 1/2 cup flour for the entire crust or 1 cup total? (I did the 1/2 cup originally)

    The recipe was bit confusing but what I loved about it was that it was precise and very easy to make.

    I didn’t expect the crust to be more like a batter. There was no pressing into the pan. The batter was spread into the pan due to it’s thin consistency. I did have to cook 15 minutes longer to achieve the slightly browned crust. Did I do something wrong in my measurements? I remade the crust thinking that maybe I added 1/2 cup coconut oil instead of 1/4 cup, but it had the same batter consistency.

    1. Hey Donna, I’m so sorry the crust was such a disaster. I don’t know what to say, this hasn’t been my experience at all. Perhaps you can use a tried and true crust with the rest of the recipe. ? 🙂 Thx for feedback!

    Hi Monica, This recipe sounds delicious and want to try it. The recipe says that all you need is 3/4 cups of papaya puree. That sounds like a very little quantity for an 8” x 8” pan quantity. Just want to verify that the amount is correct and not a typo. Thanks!

    1. Thank you Sue! Yes, that is correct! Papaya is very sweet and a packed 3/4 cup will give you plenty of flavor! (Though I tend to always error on the side of using more than recipes call for, and probably won’t hurt if you make it closer to a cup :)) Aloha! Hope you love it!

    This was delicious. I picked the honey and almond flour route, and it turned out well. There was more crust than filling, so next time I might double the filling. I think next time, I will use less honey.

  7. This is almost exactly what I was looking for! I recently went GF and I used to make these with AP flour. I have been craving them and the papayas were on sale.

    But, quick question: What do you think the best way to make this vegan? I was thinking flax egg for the egg white in the crust and I’m think gin arrowroot with a touch of baking powder for the filling to make it both bind and rise just a bit?

    Thoughts? I need these papaya bars back in my gluten free vegan life!

      I wish I was better at switching things out to make them vegan, but I would definitely try the flax egg for the egg whites…as for the gin arrowroot…please try it and let me know! I’m working on more vegan recipes so I hope to learn more as I go! All the best to you and if you think of it, please do give me an update! aloha-

      1. Alright, made these today with vegan subsist items and they were perfect! Used the flax “egg” for the crust, just had to bake it a couple minutes longer. Gave it a little extra nutty flavor. Used the arrowroot “eggs” (that was a typo in my original comment, just arrowroot, nothing gin about it, lol) and the filling set perfectly! Also swapped the honey for xylitol.

        Thank you so much for giving me back one of my favorite fruity treats! Can’t wait to try this crust on some lemon bars!

  8. hi!!! just a question before I try the recipe! in the filling it says 1.4c almond meal, is that 1 cup o 1 tablespoon?? thanks!

    2. OK Mary Ann–I doubled checked and on my computer it shows 1/4 (“one-fourth”) cup of Almond meal…So maybe it is getting switched on your computer…Hope that helps!! 🙂

  10. I have never looked at the “dalahäst” and seen a unicorn. The ‘horn’ is it’s ears. I grew up with this Swedish icon and never saw the unicorn in it until now. Love it!

  11. Is it really only 1/2 cup of flour in the crust? And a full cup of coconut? My crust did not set up at all, even after cooking the full time. And I can’t figure out why it didn’t set firmly.

    1. Sandy–Did you use almond flour or all purpose? The very first batch I made I used all purpose flour, and I think I used more like 3/4 cup…All of the batched I made with almond flour set up perfectly, but if you’re using AP Flour, you might want to increase the amount a little? I can’t think of anything else! (You did use coconut oil I’m assuming?) So sorry–That is too bad.
